Don Don's Arugula Quinoa Salad
- Arugula - cover your plate, you can never have too many greens!
- Add champagne dressing and toss with arugula
- Feta
- Kalamata olives
- Sun-dried tomatoes in oil
- Toss in about 1 cup of cooked lightly heated quinoa
- Top with 1/2 a sliced avocado and toasted pine nuts
Hillstone's Emerald Kale Salad Copy Cat
Ingredients:
- Salad blend of choice
- 4-6 oz grilled chicken breast
- Thinly sliced red onion
- 2 strips cooked bacon chopped
- 1/2 avocado chopped
- 1/2 cup chopped tomatoes
- Sliced hard boiled egg
- 2 tablespoons crumbled feta cheese
- Green Goddess Dressing
Put it together:
- Dress the greens and chopped nuts
- Let sit for 5 -10 minutes
- Add remaining nuts and grated cheese just before serving
